This is a beef burger. The brain burger will have more... brains.
Burger chain Meatliquor is to collaborate with chef Fergus Henderson (owner of St. John) on a brain burger, which will be sold to raise money for Parkinson’s UK.
Henderson, who lives with Parkinson’s disease himself, is known for his love of offal and 'nose-to-tail' eating.
The burger will be made from calf's brain, which has been sliced, then coated in breadcrumbs and fried before being stuffed into a potato roll. It will be topped with a sauce gribiche — a piquant sauce made with hard-boiled egg yolks, capers and herbs. The sandwich will be finished with shredded cabbage and mayonnaise.
Available throughout June, the sandwich will need to be ordered in advance, presumably in order to ensure the freshness of the brains. Diners need to purchase a ticket for £30, which then includes the burger, a portion of fries and a limited edition butcher's apron designed by Henderson.
